UBE BIKO WITH PURURUTONG (SWEET RICE AND WILD RICE IN COCONUT MILK)
Prep time: 5 minutes
Cooking time: 25 to 28 minutes LOW HEAT
Yields: serves 6
1 cup sweet rice
1 cup wild sweet rice
4 cups water
½ cup sugar
1 tsp vanilla extract
1 tsp ube extract
1 can coconut milk (NOT RECORDED IN THE VIDEO)
Rinse grains with cold water (just once).
Add 4 cups water
Cook over low to medium heat for 15 minutes – stir constantly.
When rice is sticky, add coconut milk.
Add sugar, vanilla and ube.
Stir constantly for another 10 to 12 minutes until all ingredients come together and it does not stick at the bottom of the pot.
Spread evenly in a platter.
Brush with coconut oil and latik
Cool down before serving.
Enjoy.
