SUMAN CASSAVA OR BALINGHOY Ron Bilaro · December 15, 2021 · Leave a Comment SUMAN CASSAVA OR BALINGHOYPrep time: 20 minutesCooking time: 30 minutesServes: 9 pcs1/4 cup dark brown sugar1/4 cup water1/2 cup grated coconut1 package frozen grated cassava, completely thawed1/2 cup white sugar2 tbsp vanilla extracta pinch of saltUse medium heat to melt sugar with water for 2 minutesthen add coconut and keep stirring.Cook for 2 minutes.Cool down then transfer to a bowl.This is your filling.Using the same pan, add cassava into the pan.Add white sugar, salt and vanilla extract.Keep combining .Using softened banana leaves, place abot 3 tbsp of cassava at the center then add bukayo on top. Roll away from you.Fold both ends.Repeat the process until all done.Steam for 30 minutes.Cool down and serve.
