Prep time: 20 minutes
Cooking time: 30 minutes
Serves: 9 pcs
1/4 cup dark brown sugar
1/4 cup water
1/2 cup grated coconut
1 package frozen grated cassava, completely thawed
1/2 cup white sugar
2 tbsp vanilla extract
a pinch of salt
Use medium heat to melt sugar with water for 2 minutes
then add coconut and keep stirring.
Cook for 2 minutes.
Cool down then transfer to a bowl.
This is your filling.
Using the same pan, add cassava into the pan.
Add white sugar, salt and vanilla extract.
Keep combining .
Using softened banana leaves, place abot 3 tbsp of cassava at the center then add bukayo on top. Roll away from you.
Fold both ends.
Repeat the process until all done.
Steam for 30 minutes.
Cool down and serve.
