Baked BIBINGKA GALAPONG

Prep time: 10 minutes
Cooking time: 15 minutes
Yields: 2 Sweet Rice Cakes (using 8 inch pan)
1/2 cup glutinous rice flour
1 cup rice flour
2 tsp baking powder
Pinch of salt
4 beaten eggs
3 tbsp melted butter
1 cup sugar
1 cup coconut milk
1 tsp vanilla extract
Arrange oven rack at the center of the oven and pre heat to 400 F
Combine all ingredients in a mixing bowl until smooth. Pour into an 9 inch in diameter cake pan (2 pcs) coated with cooking spray or melted butter. I prefer you also use banana leaves coated with cooking spray or melted butter before you bake it.
Bake for 6 minutes.
halfway through, pull it from the oven.
Add sliced salted eggs on top.
Bake for another 6 minutes minutes.
Drizzle melted butter or brush with softened butter
Add fresh grated coconut and sugar.
Serve right away.
