HOW TO MAKE SOY CHICKEN
Prep time: 15 minutes
Cooking time: 30 minutes
Yields: 4 large chicken thighs (2 servings) with steamed rice
2 pounds (4 pcs) large chicken thighs, skin on, bone in
4 tbsp white wine
5 tbsp soy sauce
2 tsp ground pepper
3 tbsp cooking oil
2 oz ginger, peeled and cut into small pieces
4 oz yellow onion, peeled and chopped
1 tbsp brown sugar
2 cups chicken broth
2 tbsp sesame oil
2 pcs star anise
1 cup scallions, cut into 2 inches length.
Combine chicken, 2 tbsp wine, 1 tbsp soy sauce and 1 tsp ground pepper in a mixing
bowl. Massage chicken with the marinade, cover with plastic wrap and marinade
overnight.
Heat oil for a minute, then brown chicken for about 5 minutes flipping over once and
moving chicken around occasionally.
Add ginger and onions and cook for 2 minutes stirring occasionally.
Add the remaining wine, soy sauce, brown sugar, broth, sesame oil, remaining
ground pepper and star anise. Stir to incorporate well.
Bring to boil (2 minutes)
Cover and adjust heat to medium.
Cook for another 20 minutes, stirring occasionally.
Uncover, add scallions.
Stir and cook for a minute.
Cover, turn off heat and allow carry over cooking cook the scallions.
