SOSSY CHICKEN SANDWICH
Prep time: 30 minutes
Cooking time: 5 minutes
Serves: 8 small sandwiches
2 medium size red bell pepper
2 cups grated Queso De Bola or cheddar cheese (mild)
3/4 lb skinless, boneless, chicken breast
2 cups Ladies Choice Sandwich Spread or “real” mayonnaise
Salt and pepper
1 cup Marinara sauce (store bought)
Grill bell peppers until skin is black and blistered.
Wrap in plastic wrap to cool down so you can easily peel off the burned skin.
Remove seeds and chop finely. Set aside.
Meanwhile, boil chicken tenderloins for about 5 minutes (covered) until cooked.
Cool down and using fork, shred into small strips.
In a bowl, combine mayonnaise,chicken,cheese and bell pepper.
Season with salt and pepper.
Sllice bread in half and toast.
Smear a small portion of marinara sauce on half of the bread and add a good portion of the spread.
Top with the other half of the bread.
Serve right away.
