SINIGANG NA SALMON SA KAMIAS AND LEMON JUICE
Prep time: 10 minutes
Cooking time: 15 minutes
Yields: 2 servings with steamed rice
1 large yellow onioin, peeled and thinly sliced
2 medium size roma tomatoes, quartered
1 knob of ginger, peeled and sliced thinly
3 cups fish broth or water
juice of 2 lemons
8 oz kamias
1 lb salmon fillets, cut into 4 pcs.
1 banana pepper
2 cups spinach
1/2 cup fresh cilantro leaves
Saute onions, tomatoes and ginger for 5 minutes until soft and tomatoes are mushy.
Add broth, fish sauce and ground pepper.
Add kamias and lemon juice.
Bring to a boil and cook for 5 minutes.
Mash kamias as you cook it. Cover.
Add salmon and benana pepper. Adjust heat to medium to low.
Cover. Cook for 2 minutes.
Add spinach and cover.
Taste and adjust. Add cilantro leaves.
