SALT AND PEPPER SHRIMP
Prep time: 20 minutes
Cooking time: 10 minutes
Yields: 20 large shrimp
4 tbsp cooking oil
2 oz chopped ginger
10 cloves garlic, minced
1 cup chopped green onions
2 or more jalapeno peppers, seeded and sliced thinly
1 tbsp ground pepper
1 tbsp garlic salt
2 cups cooking oil (for frying the shrimp)
20 pcs large shrimp, peeled and deveined (shell intact,heads and tails)
1/2 cup cornstarch
Wash shrimp with cold water and pat dry with paper towels thoroughly for a crispier outcome.
Freeze shrimp for 30 minutes (to firm up. This process also helps make the shrimp crispier.
Dredge shrimp with cornstarch.
Pre heat oil to 350 F.
Then fry for 2 minutes until golden brown.
Place in stacked paper towels to remove excess oil.
Set aside.
Meanwhile, saute ginger, garlic, green onions and jalapeno for 30 seconds.
Add shrimp back to the pan.
Season with ground pepper and garlic salt.
Serve right away.
