Prep time: 10 minutes
Cooking time: 8-10 minutes
Yields: 6 rice cakes
1 1/2 cups rice flour
1 tbsp baking powder
Pinch of salt
3 tbsp sugar
1/3 cup evaporated milk
2/3 cup water
Ube flavor
Vanilla extract
Combine all ingredients in a mixing bowl making sure it is smooth and flour is completely dissolved. Coat ramekins with cooking spray. Pour batter into ramekins. You can put slices of cheese on top if you wish. Steam between 8 to 10 minutes.
Brush with melted butter before serving.
