PORK RIBS SINIGANG – ANOTHER WAY OF COOKING

SINIGANG NA PORK RIBS
The recipe below is a recipe I made using lemon as my ” Pampaasim” – in the video I showed options in using different kinds of “pampapaasim”.

PORK RIBS LEMON SINIGANG

Prep time: 20 minutes
Cooking time: 1 hour
Yields: serves 4 with steamed rice

2 lbs PORK SPARE RIBS, cut into pieces
4 to 6 large tomatoes, quartered
1 large onion, peeled and quartered
salt
2 pcs taro or gabi, peeled and quartered
1 small (2 cups) radish, peeled and cut into large pieces
2 cups chinese long beans
1 large chinese eggplant, sliced into big pieces
10 pcs okra
fish sauce or patis
1/2 cup or more lemon juice (depending on how sour you want it to be)
5 stems/bunch mustard greens

Boil pork ribs with enough water, cover.
Add salt.
You may cook it for 10 minutes then remove the impurities first before
adding tomatoes and onions.
Cook until fork tender. (it took me an hour)
Add radish and taro and cook for 2 minutes.
Cover.
Uncover and add eggplant and long beans.
Cover and cook for 2 minutes.
Add okra and lemon juice.
Cover and cook for 2 minutes.
Uncover and add mustard greens.
Cover and turn off heat.
Allow carryover steam cook the greens.
Serve with steamed rice and fish sauce on the side.
Enjoy.
