PANG NEGOSYO UBE DELIGHT – NO STEAM NO BAKE!
Prep time: 10 minutes
Cooking time: 3 minutes (UBE)
Cooking time: 20 minutes (Latik)
2 eggs, beaten
1 1/2 cups evaporated milk
1/2 cup sugar
3 tbsp cornstarch
2 tbsp gelatin powder
1/4 cup ube powder
1 tbsp ube extract
Combine all ingredients except the eggs.
Mix well.
Heat over medium heat for 2 minutes.
Keep whisking.
Do not bring to boil.
Slowly add to the beaten eggs.
Keep whisking.
Return to the pan.
Keep whisking over low heat for 30 seconds.
Meanwhile – coat llaneras with cooking spray or brush with melted butter.
Divide mixture into 2 small llaneras.
Chill for 1 hour until set.
Meanwhile – make the latik.
Pour 1 can of coconut milk in a sauce pan.
Keep whisking over medium heat.
Keep stirring until it becomes solid and turn into oily crumbles.
Sprinkle on top of the ube.
Serve.
