NO OVEN NEEDED – COCONUT MACAROONS
Prep time: 20 minutes
Cooking time: 15 minutes total
Serves: 20 pcs
2 eggs
1/4 cup vegetable oil
1 tsp vanilla
salt
1/2 cup sugar
1/2 cup evap milk
1 cup all purpose flour
1 to 2 cups grated fresh coconut
Toast coconut for 6 minutes until fragrant and brown.
Whisk eggs then add oil.
Continue to whisk.
Add vanilla and salt.
Add sugar in batches and whisk.
Add milk.
Keep whisking while adding flour.
Make it smooth.
Add toasted coconut.
Coat llanera with cooking spray.
Divide batter into two
Steam for 6 minutes.
Cool down.
Cube into small pieces.
Pre heat pan with a little oil.
Fry both sides for a minute until toasted.
Serve.
