MENUDO NI NANAY
Prep time: 45 minutes (including cutting 4 lbs of pork)
Cooking time: 45 minutess
Serves: 12 people
6 tbsp cooking oil
1 large onion, peeled and chopped
10 cloves garlic, minced
4 lbs of pork butt, cut into small pieces
1 1/2 lb chicken liver, washed and drained
6 small boxes of dried raisins
1/4 cup soy sauce
1/4 cup Hunt’s tomato catsup
1 large can tomato sauce (14.5 oz)
3 tbsp sweet pickle relish
3 cups diced peeled potatoes
1 large red bell pepper, seeded and cut into small dice
1 green bell pepper, seeded and cut into small dice
Salt and pepper (if you prefer) to add
Pre heat oil for a minute in a big wok.
Add onions and cook for a minute then add garlic.
Saute for 30 seconds.
Add pork, stir and cover and allow to cook until soft.
Takes 30 minutes or longer depending on the kind of pork you use.
Meanwhile, boil liver for 5 minutes.
Remove and cut into small pieces and set aside.
Uncover pork and add raisins, bell pepper, soy sauce, pickle relish, potatoes.
Allow to cook for another 10 minutes (kase hindi palambot ang pork)
Add catsup and tomato sauce.
Cook for 20 minutes over medium heat.
Then add back chicken liver and combine well.
Taste and adjust.
Serve with steamed rice.
