10 Minute – Grilled Mongolian Steak with sautéed Mushrooms.
Prep time: 5 minutes
Cooking time: 10 minutes or less
Yields: 4 servings @230 calories per serving without rice
1 pound skirt steak 180 cal per serving/4 oz
1/3 cup cornstarch
ground pepper
1 tbsp grated ginger
1/3 cup low sodium soy sauce – 30 calories + 2 tbsp for the sauce 20 cal
1/4 cup brown sugar
1 cup beef stock/broth
10 sprigs of scallion. cut into into 5 inch length.
1 cup mushrooms (white button mushrooms) 25 cal

Cut or slice steak across the grain thinly and in bias. Combine steak with cornstarch, ground pepper, 1/3 cup soy and ginger in a mixing bowl. Combine well.
Pre heat grill pan for 2 minutes. It has to be hot. Coat lightly with cooking spray and grill steak for 7 minutes turning once. (it has to be brown and well cooked.)
Meanwhile, make a slurry by using the bowl used in combining the steak (I only used it to maximize the leftover cornstarch from the bowl) add brown sugar and broth. Whisk well to incorporate the cornstarch from the rim of the bowl as you have seen on my cooking video.
Meanwhile, pre heat a skillet and coat generously with cooking spray.
Add mushrooms and cook for 2 minutes.
Add beef back and scallions.
Add slurry. Stir. WORK FAST. Cook for 30 seconds and the sauce will thicken.
Remove from the pan and serve immediately.
