MANGO SPINACH SALAD
Prep time: 10 minutes
Cooking time: 7 minutes
Seves: 4 servings with steamed rice
4 tbsp cooking oil
10 cloves garlic, minced
1 medium size onion,peeled and chopped
2 large tomatoes, chopped
1 medium size banana peppers, seeded and chopped
1 cup bottled, cooked shrimp paste in oil
1 bunch fresh spinach with stems
3 cups chopped fresh mangoes – mangoes are firm yet sweet.
Pre heat oil
Saute garlic, onions,tomatoes and peppers.
Cook for 5 minutes until super soft.
Add shrimp paste.
Keep stirring for 2 minutes over low heat.
Adjust heat back to high and spinach.
You may cover and adjust heat to low and cook for 1 minute.
Or keep combining until spinach is wilted (1 minute on heat) and 2 minutes without.
Add chopped mangoes.
Serve right away.
