MACARONI AND CORNED BEEF

Cooking time: 15 minutes
Yields: serves 6
2 cups macaroni, cooked according to package instructions
1 cup chicken stock
1 can corned beef
1 can cream of mushrooms
1 tbps annatto powder dissolved in ½ cup water
1 tbsp tomato paste
salt and pepper
Grated parmesan cheese
In a medium pot combine stock with tomato paste, cream of mushrooms, corned beef, ground pepper. Cook for a minute or until it boils.
Add pasta and combine well.
Add annatto powder dissolved in water to the pasta.
Season with salt. Keep stirring and cool down and allow the pasta to absorb the liquid.
Add cheese before serving.
