LECHON SISIG FRIED RICE
Prep time: 30 minutes
Cooking time: 15 minutes
Yields: 4 servings
SISIG SAUCE:
Juice of 1/2 lemon
1/4 cup mayonnaise
2 to 3 tbsp soy sauce
1/2 tsp ground pepper
Combine all the ingredients in a bowl and whisk until smooth. Set aside for now.
FRIED RICE
4 tbsp cooking oil
5 tbsp minced garlic,
2 pcs Chinese sausage, chopped
3 cups stale steamed rice
2 cups frozen mixed vegetables
3 eggs, beaten
salt and pepper
1 lb chopped lechon – meat and skin
1 tsp knorr liquid seasoning
1/2 cup chopped green onions
Using a large wok, pre heat oil.
Saute garlic for 30 seconds
Add Chinese sausage and cook for 1 minute over medium heat until it releases oil.
Add rice.
Season with salt and pepper.
Keep stirring.
Cook the rice over medium heat for 2 minutes.
Add vegetables.
Stir and cook the vegetables for 2 minutes over medium heat.
Add beaten eggs.
Continue to whisk and cook for 2 minutes.
Turn off heat.
Transfer rice in a plate.
Using the same pan.
Cook lechon for 3 minutes until crispy
Slowly add sauce.
Keep stirring and cook over low heat.
Add rice.
Add more sauce and keep stirring.
Finally add green onions.
Serve.
