Paksiw na Pata 8 lbs large pata 1 tbsp salt 1 large onion 8 cloves garlic 1/2 cup soy sauce 1/2 cup vinegar 2 tbsp sugar 1/2 cup oyster sauce 1 cup pineapple juice 8 cups of reserved broth dried bay leaves dried banana blossoms star anise ground pepper Saba Wash pork with cold water well and season with salt. Boil until tender. Save broth. In a large wok saute onions and garlic. Add cooked pork Add soy sauce, vinegar, oyster sauce, pineapple juice, sugar,broth, bay leaves, banana blossoms,star anise,ground pepper. Cover and boil for 10 minutes or until sauce thickens. Add saba. Simmer for 2 minutes. Serve.
