“BELLY”TIM ALA PATATIM
Prep time: 30 minutes
Cooking time: 40 minutes
Serves: 4 servings with steamed rice
2 lbs pork belly
4 tbsp oil
1 lb mushrooms
1 medium size onion, peeled and chopped
5 cloves garlic, minced
3 star anise
3 bay leaves
6 cups chicken stock or more until pork is tender
5 spice blend (optional)
1/4 cup soy sauce
2 tbsp Knorr Liquid seasoning
ground pepper
2 to 3 tbsp brown sugar
1 tbsp sesame oil

potatoes
Sear pork belly for 5 minutes until brown but not cooked.
remove pork and set aside.
Uncover and add oil then saute mushrooms for a minute.
Add onions and garlic and cook for 1 minute.
Add star anise, bay leaves and cook for 2 minutes.
Add stock and bring to a boil.
Add 5 spice blend.
add soy sauce and Knorr liquid seasoning
Add ground pepper and brown sugar.
Add pork back and bring to a boil.
Add sesame oil.
Cover and cook for 25 minutes or until pork is tender.
Uncover
Add potatoes and carrots.
Cook for 10 minutes until potaoes are tender.
Add thickener.
Keep cooking for 1 minute.
Serve.
