How to make grilled chicken inasal
Prep time: 20 minutes
Cooking time: 10 to 12 minutes per batch
Yields: 4 servings with steamed rice
3 cloves garlic, minced
1 to 2 knobs ginger, peeled and chopped
2 tbsp brown sugar
½ cup coconut vinegar – suka
Salt and pepper
2 stalks of lemon grass, white part only, smashed to release the flavor
½ cup coconut oil
2 tbsp chicken powder
2 ½ pounds skinless boneless chicken thighs
Combine all the ingredients and marinate overnight or longer.
Grill for 10 minutes turning occasionally.
