Yields: 8 pcs
6 oz green papaya, peeled, seeded and cut into matchstick size
6 oz sweet potato/kamote, peeled and same size as papaya
1 cup chopped kinchay or cilantro
salt and pepper
1 cup all purpose flour
1 tsp baking powder
1 cup cold water
Combine all ingredients and turn into a batter.
Pre heat enough cooking oil
Make sure oil temperature is between 350 F to 400 F.
Add 2 tbsp of the batter into the hot oil.
Place 1 medium size shrimp on top and begin bathing the top with hot oil to cook it as well.
Cook between 3 to 5 minutes turning once and until brown and crispy.
Repeat the process until all cooked.
Serve with vinegar and thai chiles.
