GINATANG BILO BILO/HALO HALO
Let’s make the BILO BILO first.
Combine 2 cups of glutinous rice flour, 2/3 cup water, a few drops of ube extract and 1/3 cup of ube powder-
Combine and mold into 38 pcs of BILO BILO -set aside
Meanwhile
Combine 2 cans of coconut milk (14.5 oz each) plus 4 1/2 cups of water. Cover and bring to a boil (10 minutes)
Add 2 cups kamote (cubes)
Add 2 cups taro or gabi (cubes)
Cover and adjust heat to medium and cook for 5 minutes.
Uncover and add the following.
2 cups saging na Saba (cubes)
2 cups langka strips
3 cups of cooked sago
BILO BILO
Add the slurry-
Slurry:
1/4 cup glutinous flour
1/2 cup of gata (take some from the pot)
And a few drops of ube extract.
Combine and dissolve well.
Add to the pot and stir.
Cover, adjust heat to low and cook for 5 minutes.
Turn off stove
Cool down to make the liquid thicker.
Serve!
