Serves: 3 to 4 with steamed rice
3 to 4 pcs tilapia fillets (4 oz each)
1/2 cup all purpose flour
2 eggs, beaten
1/2 cup bread crumbs
salt and pepper
Cooking oil
1 can coconut milk
1 cup canned crushed tomatoes
1/2 tbsp red curry paste
fish sauce
cumin powder
1/2 tsp sugar
1 tsp annato powder
Chopped cilantro
Place flour, eggs and bread crumbs into separate bowls.
Season with salt and pepper
Roll fish into the flour, into the eggs and into the seasoned bread crumbs.
Pre heat oil to 350 F before frying.
Fry until golden brown.
Remove excess oil.
Meanwhile – let’s make the sauce.
Cook coconut milk for 10 minutes untl reduced.
Add canned crushed tomatoes
Add red curry and stir in.
Add fish sauce
Add cumin powder, sugar and annato powder
Turn off heat and add chopped cilantro.
Serve with the fish.
