HOLIDAY EMBUTIDO(PORK LOAF)

Note: Whether you bake (350 F), you steam bake (350 F) or steam it over stop top – the results were all the same from flavor to texture.

a.
2 ¼ pounds ground pork
4 oz raisins
8 oz grated carrots
1 cup plain bread crumbs
1 tbsp salt
1 tbsp ground pepper
1 tbsp KNORR LIQUID SEASONING
2 oz grated cheddar cheese
2 eggs
1 cup LADY’S CHOICE SANDWICH SPREAD

b.
4 oz chopped yellow onion
4 oz chopped red bell pepper
10 cloves garlic, minced

c.
1 small can quail eggs about 18 pcs, drained
12 to 15 Vienna sausages, drained

d.
several sheets of aluminum foil
several pieces of fresh banana leaves

Saute all (B) ingredients for 5 minutes stirring constantly until cooked. Cool down and set aside.
Combine all (A) ingredients well in a large mixing bowl.
Add sautéed (B) ingredients with the combined (A) ingredients.
Divide into 3 to 4 portions.

Meanwhile, place banana leaves in a microwave and heat on high for a minute until soft and pliable. Using a clean cloth or paper towels, wipe and scrape white sticky powder from banana leaves until clean and shiny. Set aside.

Place 2 pieces of aluminum foil in a flat clean surface or chopping board.
Place banana leaves on top of aluminum foil.
Place 1 portion of the meat mixture into one end of the leaves.
Flatten mixture using a spatula.
Line 4 to 5 pcs of Vienna Sausage at the center of the flattened meat combination.
Line 5 to 6 pcs of quail eggs next to the sausages just like in the video.
Tuck and roll away from you until reached the other end of the foil.
Twist folded foil and secure both ends from the sides.
Bring a large pot of water to a boil.
Place steamer basket of any steamer you have available.
Steam for 1 hour over high heat. Make sure you refill the water in case it runs out.
Remove from the basket and cool down completely. (I chilled mine in the refrigerator over night before I sliced it and presented it to you in the video)

Slice thinly using a serrated knife (preferred)

LADY’S CHOICE BUTTER GRAVY

2 tbsp butter
1 ½ tbsp all purpose flour
1 cup pork or chicken broth
2 tbsp Lady’s Choice Sandwich Spred
2 tbsp soy sauce
a pinch of ground pepper
4 tbsp butter

In a small sauce pot, melt butter while stirring.
Add flour and keep stirring and cook for a minute over medium heat.
Meanwhile combine Lady’s Choice Sandwich Spread with soy sauce and ground pepper. Combine and dissolve well.
Add broth into the pot. Bring to a boil and keep stirring then slowly add Lady’s Choice Sandwich Spread mixture into the pot.
Keep stirring and cook for another 2 minutes.
The sauce becomes thick.
Cool down and serve with the pork loaf.
