DINAKDAKAN

What is DINAKDAKAN – Dinakdakan is an Ilocano delicacy made with grilled pork parts such as the face, ears, liver and tongue. The charred meats are chopped into small pieces and tossed in a tangy calamansi or vinegar dressing with minced ginger, red onions and chili peppers. The classic dish use boiled pig’s brain instead of mayonnaise that we often see these days.

Prep time: 30 minutes
Cook time: 1 hr 32 min
Serving: 10 people

Ingredients:
1 liter water
4 pcs bay leaves
3 tbsp salt
3 tbsp peppercorn
1 kilo pork face
4 pcs onion, peeled and chopped
1/2 kilo pork brain
5 thumbs ginger, peeled and chopped
8 pcs green pepper sliced
1 cup palm vinegar
Salt and papper to taste

Boil water in a pot with bay leaves, salt peppercorns
Add pig’s part.
Cover and cook for an hour or longer until soft.
remove from the pot. Cool down and clean.
Some use shave to remove the hair.
Meanwhile – clean the pork brain. Rinse well with cold water.
Place pork brain in a strainer and put inside the same pot.
Cover.
Boil for 10 minutes.
Uncover.
Remove the pork brain and set aside.
Grill the pork for about 6 to 8 minutes each side or until well charred.
Let cool and then cut into small pieces.
In a large bowl, combine pork, onion, green pepper, ginger, vinegar and pork brain.
Add salt and pepper according to your taste.
Serve.
