CRISPY PORK CHOP AND GREEN BEANS WITH TAUSI
Prep time: 20 minutes
Cooking time: 15 minutes
Serves: 4 people with steamed rice
1 lb green beans, ends and tips removed.
1 lb boneless pork chop cut into strips
3 tbsp cornstarch
salt and pepper
enough cooking oil to deep fry pork chop.
1 large onion, peeled and chopped
5 cloves garlic minced
2 large tomatoes, chopped
1 tbsp chili garlic paste
1 cup water
1 can fermented black beans drained.
3 tbsp fermented black beans brine (from the can)
1/2 cup REAL mayonnaise
Boil water and blanch green beans for a minute.
Then immediately place in an iced bath for 3 minutes.
Remove and place in a colander lined with paper towels to remove excess water.
Set aside.
Combine pork chops with cornstarch and season with salt and pepper.
Pre heat oil and deep fry pork between 5 to 6 minutes until golden brown and crispy.
Remove and set aside.
Pre heat 4 tbsp of cooking oil a large skillet.
Saute onions and tomatoes for 5 minutes over medium heat.
Add garlic and chili garlic paste.
Add black beans, brine and water.
Combine and bring to a boil over medium heat.
Add green beans back.
Add mayonnaise and combine well.
Season with salt and pepper.
Taste and adjust.
Add back pork chop.
Serve right away with steamed rice.
Enjoy.
