SHRIMP AND MUSHROOM CREAMY CARBONARA PASTA

Serves: 6
1/2 box spaghetti cooked according to package instructions (227 grams)
4 tbsp butter
1/4 cup olive oil
4 cloves garlic, chopped
2 to 3 large tomatoes, seeded and thinly sliced
1 cup sundried tomatoes (in oil) if using
1 package fresh mushrooms (8 oz)
salt and pepper
1/4 cup white wine
1/2 lb medium size shrimp peeled and deveined
1 box fresh spinach (5 oz)
200 grams cheddar cheese (diced)
1/2 can evaporated milk
1 cup pasta water
1 cup grated parmesan cheese
While cooking pasta –
Melt butter in a skillet as you pre heat the olive oil.
Add garlic and fresh tomatoes and cook for 2 minutes.
Add mushrooms, season with salt and pepper and cook for 2 minutes.
Add white wine and cook for 30 seconds.
Add shrimp and spinach.
Add 1 cup of boiling pasta water.
Add cheddar cheese.
Cover and cook for a minute.
Uncover.
Add spaghetti.
Add milk and keep combining.
Add parmesan cheese.
in a bowl, beat two eggs.
Add some pasta and combine.
This is to slightly introduce the eggs to the hot noodles without completely cooking the eggs.
Slowly add back the eggs (with some pasta) into the skillet.
Add more cheese if needed.
Serve.
