SAPIN SAPIN (PANDAN AND UBE)
Prep time: 20 minutes
Cooking time: Sapin sapin – 20 to 25 minutes
Yields: 4 to 6 servings
1 ¾ cup Glutinous Rice Flour
¼ cup rice flour
½ cup condensed milk
1 can coconut milk
(you can add 2 tbsp of sugar) if you want it sweeter
1 tsp vanilla extract
a pinch of salt
pandan extract
ube extract
Combine flour and salt and sugar if using.
Combine condensed milk, coconut milk and vanilla
Combine both and mix well until smooth.
Divide into 2.
Add Pandan flavor to the other mixture and add ube to the other.
Coat your container (I used a regular wide ceramic bowl) with cooking spray.
Pour ube flavored sapin sapin.
Steam for 10 to 12 minutes or until set.
Uncover steamer basket and pour pandan mixture into cooked ube sapin sapin.
Cover.
Steam between 10 to 12 minutes or until cooked.
Cool down. Allow the edges to come off by itself.
Invert into a plate.
Sprinkle with coconut curd/latik
Slice and Serve.
