Creamy Pasta with Salmon, Lemon, and Peas

Prep time:
Cooking time: 10 minutes
Yields: serves 4
2 pcs salmon fillets, 6 oz each
2 cups penne pasta
½ cup heavy whipping cream
1 ½ cups frozen peas
2 tbsp lemon juice
4 tbsp lemon zest
3 tbsp grated Parmesan cheese
Salt and pepper

Pre heat the oven to 400 F. Bake salmon for 10 minutes. Remove from the oven and
allow salmon to cool down before flaking using a fork and a spoon. Set aside.
Meanwhile, cook pasta according to package instructions. (Make sure you add salt to
the boiling water before adding the pasta.
Heat cream gently using low heat, about a minute.
Add frozen peas, lemon juice, lemon zest and salmon.
Gently stir.
Add cooked pasta into the pan.
Season pasta with salt and pepper.
Do not cook for more than 3 minutes because the peas will turn gray.
Always use low heat.
Add Parmesan cheese before serving.
