CORNED “BEEF” WITH BROCCOLI PLUS MINI TOUR

Cooking time: 10 minutes
Serves: 2 with steamed rice
1 can corned beef
4 tbsp cooking oil
4 tbsp cooking oil
1 large onion, peeled and chopped
2 large tomatoes, chopped
5 cloves garlic, minced
1cup chicken stock plus 1/2 cup chicken stock
2 cups broccoli, cut into small pieces
1 tbsp sesame oil
3 tbsp soy sauce
1 tbsp cornstarch
Wash and rinse corned beef with hot water to remove grease and fat.
Dry with paper towel to remove the water.
Pre heat 4 tbsp of cooking oil then fry corned beef for 7 minutes or longer until crispy.
Set aside. Place in a paper towel to remove excess oil.
Using the same pan – pre heat another 4 tbsp cooking oil.
Saute onions, tomatoes and garlic for 5 minutes until fully cook and watery.
Add broccoli, add 1 cup stock, lower heat to medium, cover and cook for 1 5to 2 minutes.
Do not over cook the broccoli.
Uncover and pour the slurry – (1/2 cup stock,sesame oil, soy sauce and cornstarch)
Stir to combine and to make the sauce thicker.
Add crispy corned beef before serving.
Serve with steamed rice.
