CHICKEN PESTO PASTA

Serves: 4
(The recipe was adjusted to serve 4 adults)
Pesto Sauce:
2 bunches of basil leaves
1/2 cup pine nuts
8 cloves garlic, minced
salt and pepper
1 1/2 cup olive oil
1 1/2 cups grated parmesan cheese
Combine all ingredients in a blender or food processor until smooth.
Taste and adjust.
Chicken Pesto
4 cups shredded rotisserie chicken (white meat only)
1 cup heavy cream
1/2 cup boiling pasta water
1 cup grated parmesan cheese
salt and pepper
1/2 box linguini pasta
Cook pasta according to package instructions.
Meanwhile – lets make the pesto cream –
Pre heat (low heat) cream in a saute pan and add 1 cup pesto sauce.
Stir in cheese and pasta water.
Season with salt and pepper.
Add cooked pasta and chicken.
Drizzle more cheese before serving.
