Buko Pandan

How to make Buko Pandan

  • Prep time: 10 minutes
  • Cooking time: 5 minutes
  • Yields: 6 small servings

Ingredients

  • 2 cups water
  • ½ cup white sugar
  • 5 long pandan leaves
  • a few drops of Pandan extract
  • 2 packets unflavored gelatin (knox brand)
  • ½ cup tapioca pearls (New Sago brand)
  • 1 coconut milk
  • 1 condensed milk
  • 1 evaporated milk
  • 2 cups of shredded coconut (buko)
  1. Boil water with pandan and sugar for 5 minutes.
  2. Remove pandan leaves.
  3. Add gelatin and stir.
  4. Strain and place liquid in a bowl and chill for an hour to set.
  5. Cut into slices.
  6. Meanwhile, boil water and add your tapioca pearls. Follow cooking directions at the back of the package.
  7. Remove and drain and save tapioca pearls.
  8. Meanwhile, combine coconut milk, condensed and evaporated milk in a bowl.
  9. NOTE: you can heat it over low heat (optional).
  10. Combine buko strings, sago, dairy and the pandan gelatin..
  11. Chill in the fridge.
  12. Serve with ice cream.
