BISTEK BA BANGUS- (Milkfish in lemon and soy with onions)
Prep time: 15 minutes
Cooking time: 8 minutes
Yields: 4 to 5 pcs bangus
1/2 cup all purpose flour
1 tsp salt
1 large milkfish, gutted and cut into 5 pcs
2 cups cooking oil
1 large yellow onion, peeled and cut into rings
5 cloves garlic
juice of 1 lemon
1/4 cup water
1/4 cup soy sauce
2 tbsp butter
ground pepper
dredge fish into flour with salt.
heat oil for 3 minutes
add fish and cook for 4 minutes turning once until golden brown.
Set aside.
heat 2 tbsp of oil in a pan.
Add onions, cover and cook for 2 minutes.
Remove from the pan.
using the same pan, add another 2 tbsp oil
add garlic and cook for 30 seconds.
Meanwhile, combine soy, water and juice in a cup.
Pour into the pan.
Allow to boil for a minute.
Add butter and melt.
Add fish back, coat fish with broth.
Add onions back.
Turn off heat.
