UBE MAJA MAIS
Note: I bought the ube flavored condensed milk from Seafood City in Chicago.

Prep time: 10 minutes
Cooking time: 20 minutes including the latik
Yields: Serves 6 to 8

1 can coconut milk
! can cream style sweet corn
1 can UBE flavore condensed milk
a pinch of salt
1 tbsp vanilla extract
Slurry – dissolving 1 cup cornstarch with 1/2 cup water
cooking spray
FOR THE LATIK –
1 can coconut milk

Combine coconut milk, corn, condensed milk, salt and vanilla extract in a pan.
Stir and cook for a minute.
Add slurry.
Cook and stir over medium heat for 10 minutes until it is thick.
Meanwhile – coat a baking dish with cooking spray.
Slowly pour batter into the dish
Cover with plastic wrap
Chill in the refrigerator for 2 hours or longer until sets.
for the latik- just keep stirring coconut milk for 25 minutes over medium heat until it becomes curd.

To serve, slice maja mais and sprinkle latik on top.
