Ube Halaya/Mashed Purple Yam with Coconut and Cream.
Prep time: 5 minutes
Cooking time: 25 minutes
Yields: one medium size round pan (8 inch)
1 can condensed milk
1 can coconut milk
1/2 cup evaporated milk
Pandan leaves
Salt
2 packages frozen grated ube (thawed)
Ube flavoring
1 stick butter
2 tbsp melted butter for brushing
In a large Dutch oven- combine condensed, evaporated and coconut milk. Add pandan leaves and salt. Bring to simmer for 5 minutes.
Remove pandan leaves.
Add Ube and flavoring.
Continue to stir for 18 to 20 minutes until smooth – using low heat.
Add 1 stick of butter and continue to stir.
Transfer to a dish.
Flatten top with spatula.
Brush with melted butter.
Chill in the fridge.
Serve.
