Prep time: 30 minutes
Cooking time: caramel – 5 minutes
Baking time: 25 minutes
Group A.
3eggs
1/2 cup vegetable oil
1 1/4 cups evaporated or whole milk
1 cup sugar
1/2 cup sour cream
4 drops of Ube extract
Group B
2 1/2 cups all purpose flour
3 tsp baking powder
C – Caramel
1/2 cup sugar
2 tbsp butter
3 hard boiled salted eggs, peeled and sliced thinly
Place group A in a blender and process until smooth.
Slowly add group B ingredients and process until smooth
Do not over mix when adding the flour. A few pulses are good.
Meanwhile, melt sugar in a non stick pan.
This takes 5 to 10 minutes using medium to high heat.
turn off heat.
Add butter and swirl to melt.
Coat a square baking pan with cooking spray.
Pour caramel into the pan.
Add sliced eggs.
Pour batter into the cake pan.
Steam bake between 25 to 30 minutes.
