How to make Thai inspired chicken adobo with lemon grass and basil leaves:
Prep time: 15 minutes
Cooking time: 30 minutes
Yields: Serves 4 to 6 with steamed rice
1 cup cooking oil
2 1/2 pounds chicken cut up into small parts.
10 cloves garlic
4 inch white part lemongrass, cut in half and smashed
2 tbsp soy sauce
3 tbsp fish sauce
Juice of 1 1/2 lime (1/2 cup)
1/2 tbsp Chili garlic sauce
1 cup water or chicken broth
1 cup chopped Thai Basil leaves
Pre heat oil to 350 F and cook chicken for 6 minutes.
Remove cooking oil and leave about 3 tbsp.
Add garlic, soy, fish sauce, pepper, lemongrass, lime juice and water.
Bring to a boil.
Cover and cook for 15 minutes.
Uncover and cook for another 5 minutes over low heat to reduce the liquid.
Add chopped thai basil leaves before serving.
Serve with steamed rice.
