PRESSURE COOKER SUMAN SA LIHIYA and LATIK
Prep time: 45 minutes
Cooking time: 20 minutes
Yields: 16 halves of suman
4 cups glutinous rice soaked in cold water for 1 hour.
1 tbsp lye water – NOTE: in my video i have said 2 tbsp. please change it to 1 tbsp.
Banana leaves for wrapping
Kitchen twine
For LATIK
1 can coconut milk
1 cup brown sugar
a pinch of salt
Strain rice and add lye water. Combine well.
Clean banana leaves with clean cloth or paper towel to remove the white stuff.
Place leaves over fire or in a microwave (1 minute on high) to make it soft and pliable.
Wrap about ¼ cup of rice into 2 layers of banana leaves ( please see my cooking video)
Stack well in a pressure cooker. Fill pressure cooker with enough water.
Put the lid according to pressure cooker instructions.
Cook on high heat.
Once you hear the whistle, time it for another 15 to 20 minutes.
Cool down the pressure cooker and run cold water on top before removing the lid.
Strain.
Unwrap and serve with coconut caramel or latik.
LATIK
Combine coconut milk, salt and brown sugar in a small pot.
Use medium heat as you stir occasionally.
Cook for 18 minutes until thick.
Cool down slightly and serve with the suman.
