SUAM NA MAIS/GINISANGMAIS (SAUTEED WHITE CORN WITH SHRIMP)

Ingredients:
4 tbsp cooking oil
8 white corn
1/2 kilo shrimp peeled
1 bunch ampalaya leaves (bittermelon leaves)
4 tbsp alamang (shrimp paste)
2 onions, peeled and chopped
5 cloves garlic,minced
2 to 3 glasses of water (4 measuring cups) or broth
In a bowl cut the kernels off the cobs from top to bottom.
Then in a small bowl scrape the cobs using a spoon to get the remaining pulp and the juice. (save the juice)
Pre heat cooking oil in a large pot.
Saute garlic and onion for 2 minutes.
Add the shrimp and cook for 2 minutes.
Add the alamang and continue to cook for 3 minutes.Cover.
Add the cut corn until it becomes translucent.
Add water or broth, cover and simmer for 8 minutes stirring occasionally.
Add corn juice.
Cover and simmer for 3minutes.
Add pepper and ampalaya leaves.
Cover and simmer on low for a minute before serving.
