STIR FRIED BEEF WITH SCALLIONS AND SOTANGHON

STIR FRIED BEEF WITH SCALLIONS AND SOTANGHON

Prep time: 30 minutes
Cooking time: 20 minutes or less.
Serves: 4

1 1/2 lb sirlion steak cut into bite size pieces (thinly sliced)
3 tbsp Xiaoxing Chinese cooking wine
3 tbsp olive oil
3 tbsp sesame oil
2 tbsp cornstarch
1 tsp salt
1 tsp ground pepper
4 tbsp cooking oil
3 tbsp soy sauce
3 tbsp oyster sauce
1 tbsp white sugar
4 tbsp ginger, chopped
10 cloves garlic, minced
1 small onion, peeled and chopped
1/2 large red bell pepper, seeded and sliced thinly
5 stems green onions, roots removed and cut into large pieces

SOTANGHON NOODLES
3 to 4 bunch noodles
2 tbsp of the soy sauce marinade

Combine steak with wine, olive oil,sesame oil,cornstarch and salt and pepper.
Cover with plastic wrap and marinate for an hour in the refrigerator.
Pre heat 4 tbsp cooking oil
Saute ginger and garlic over medium heat for a minute.
then fry beef until tender and brown (it took me 13 minutes)
Add soy sauce, oyster sauce, sugar and stir.
Add onions, bell pepper and green onions.
Stir and cook for 2 minutes over high heat.

Meanwhile – to cook the noodles –
Soak sotanghon noodles in luke warm water for 5 minutes until soft.
Transfer the beef slices into a bowl.
leave the oil from the beef in the pan.
Add drained noodles and keep stirring for a minute until fully cooked.
Add soy sauce and oyster sauce.
Add beef to the noodles.
Stir and serve.
