STEAMED RICE CAKES OR “PUTO” IN TAGALOG
2 cups rice flour
3/4 cups sugar
1 1/2 tsp baking powder
pinch of salt
1 cup coconut milk
1 cup water
Vanilla extract
Ube or purple extract
Cheddar cheese slices
Sift and combine rice flour, sugar, salt and baking powder.
Combine coconut milk and water and slowly whisk into the sifted dry ingredients.
Keep whisking until smooth.
Divide batter if you are making two flavors
Pour Vanilla into one batter and whisk. Do the same with Ube.
Coat molders with cooking spray.
Pour batter (75% only of the molder) into each molder
Cover with clean cloth.
Put lid.
Steam for 8 minutes.
Remove lid and place cheddar cheese slices on top if using.
Turn off heat.
Put lid back and allow carry over cooking to melt the cheese.
Serve hot.

Hi chef, does it matter if the heat is medium or high the cooking time will still be 8 minutes?
Yes it does.. pag daw malakas ang apoy – it will be Putong Putok – meaning it is cracked. Pag medium heat – it will be smooth and even. Both are equally yummy! Take care..
