STEAMED (PORK) BOLA BOLA DUMPLINGS –

STEAMED BOLA BOLA DUMPLINGS

Prep time: 30 minutes
Steaming time: BOLA BOLA 20 minutes
Steaming time: DUMPLINGS 20 minutes
Yields: 8 pcs

1 1/2 cups glutinous rice flour
1/2 cup rice flour
1 cup water plus 2 tbsp

Combine all ingredients together.
Cut into 8 pcs
Mold each piece into a ball then flatten it using your palm.
It should be wet but not sticky.
It should not break.
Use drops of water to make it soft it is dry and cracks.
Use oil or flour so it will not stick into your hands.

Place one cooked bola bola at the center of the flattened dough.
Gather all sides and meet at the center.
Continue to mold and until smooth.
Steam for 20 minutes until the dough is cooked.
If you make it thicker, steam longer.

FOR THE BOLA BOLA

2 oz grated carrots
1 small onion, peeled and chopped
2 oz finely chopped celery
2 oz finely chopped ham or spam/lucheon meat
1 tsp salt
1 tsp ground pepper
2 tbsp oyster sauce
2 tbsp cornstarch
2 hard boiled eggs, peeled and quartered
1/4 lb ground pork
1 egg

Combine all the ingredients and mold into ball. It should yield 12 pcs.
Steam for 20 minutes and cool down completely.
