UBE RICE CAKES/PUTO
In this cooking video you will see 2 types of cooking techniques, one is stove top steaming and the other one is steam baking in the oven.
Prep time: 10 minutes
Cooking time: Oven – 30 minutes
Stove top steaming 15 minutes
Yields: 24 pieces rice cakes (each rice cake is about 3 bites)
4 cups rice flour
3 tbsp baking powder
1 can coconut milk
3 cups water
1 can condensed milk
salt
Ube extract/flavoring if using
Grated cheese if using
Melted butter if using
Combine flour, baking powder and salt in a mixing bowl. Add coconut milk, water and condensed milk. Stir until smooth and no lumps. Strain. Coat cooking molders with cooking spray.
If you are baking – pre heat oven to 350 F with the oven rack at the center. Place molders in a baking dish and pour batter into each molder up to ¾ of the molder. Pour hot water into the baking dish covering at least 75 percent of the molders. Cover with foil and bake for 30 minutes. Remove from the oven, add cheese on top and put it back in the oven for a minute to melt the cheese. Unmold. Brush with melted butter on top. Serve.
If you are using a stove top steaming – place enough water in a wok. Bring to a boil. Coat molders with cooking spray. Pour batter into molders. Place a clean cloth on top of the molders before putting the lid. Steam for 15 minutes. Unmold and brush with melted butter on top before serving.
