Serves: 8 servings
1/2 can coconut milk
1 can evaporated divided into two
1/2 can condensed milk
1 tbsp Vaniila essence
1 few drops of yellow food color
1/2 can cream style corn
1 can whole kernel corn divided into two
1 cup cornstarch
Combine coconut milk,1/2 evap,condensed, vanilla, cream style and 1/2 whole corn in a pan.
Add food color.
Simmer for 3 minutes.
Meanwhile – combine cornstarch with the remaining evaporated milk.
Whisk well to dissolve.
Slowly whisk it into the simmering milk in the pan.
Keep stirring until very thick.
Transfer into a container coated with cooking spray (to prevent from sticking)
Add the remaining half of the whole kernels on top.
Chill in the refrigerator until well set.
Add latik.
Slice and serve cold.
