CHICKEN,HAM AND SPINACH CHEESEY SNACK BURRITOS
Prep time: 30 minutes
Cooking time: 10 minutes or less
Yields: 6 large snack burritos
4 tbsp cooking oil
1/2 lb chopped skinless, boneless chicken breast
4 oz chopped pre-cooked ham
3 eggs, beaten
2 oz frozen spinach, thawed
4 oz chopped fresh tomatoes
1/2 medium size onion, peeled and chopped.
2 oz canned pineapple chunks, syrup removed and chopped
1 1/2 tbsp mayonnaise
1/2 tbsp chili garlic sauce (optional)
1/2 to 1 cup shredded cheese of your choice
salt and pepper
6 (10 inch) flour tortilas
Pre heat cooking oil in a medium size wok.
Add chicken and cook for a minute or until it is cooked.
Season it with salt and pepper. Brown it.
Add eggs and keep stirring until almost cooked (runny)
After a minute, add ham.
Add frozen spinach – i thawed the spinach before i used it.
Turn off heat. Keep combining it.
Cool down mixture.
Then add tomatoes, onions and pineapple.
Then add chili garlic sauce
then add cheese. You can add more if you like it more cheesy.
Cool down and wrap.
Meanwhile, pre heat a large saute pan.
Lightly coat with cooking spray.
Place burritos into the pan making sure the open edges touch the pan first.
This ensures to seal the edges.
Cook for a minute until it is sealed.
Turn it over and brown all sides to make it crispy.
Slice in half and serve.
