SINAMPALUKANG MANOK (CHICKEN IN TAMARIND BROTH)

Serving 10 to 12 people
1/2 kilo sampalok
4 tbsp cooking oil
5 cloves garlic
7 pcs tomatoes
4 thumb size ginger sliced
2 kilos chicken thighs and legs
1 bunch malungay leaves
6 pcs sili
Patis or fish sauce
In a pot, boil sampalok (tamarind) with enough water for 10 minutes until soft.
Mashed in a fine strainer and strain the juice. Reserve the juice and discard sampalok. (tamarind)
In a large wok- pre heat cooking oil
then saute ginger, garlic, onion and tomatoes.
Cook for 3 minutes until wilted and fragrant.
Add the chicken and patis.
Cover and simmer for 20 minutes.
Add water if needed.
Add the sampalok juice,
Cover and simmer for another 5 minutes.
Add the sili and malungay leaves.
Add more patis if needed.
Serve with steamed rice.
