Prep time: 10 minutes
Cooking time: 15 minutes
Serves: 2 with steamed rice
4 tbsp cooking oil
5 cloves garlic, minced
1 large onion,peeled and chopped
4 medium size tomatoes, chopped
1 knob ginger, thinly sliced
1 lb boneless, skinless chicken thighs
3 to 4 cups sampalok juice or tamarind juice
1 bunch fresh spinach
Pre heat cooking oil
Saute garlic, onions,tomatoes,ginger and cook for 3 minutes.
Season with fish sauce and ground pepper.
Cover and cook chicken for 5 minutes until half cooked.
Add sampalok juice.
Bring to a boil.
Cover and cook until chicken is cooked
turn off heat.
Cover and allow spinach to wilt.
Serve with steamed rice.
