SIMPLE UBE-OATMEAL COOKIES

UBE OATMEAL COOKIES

Prep time: 20 minutes
Cooking time: 15 minutes baking time
Yields: 16 cookies

A.
1 stick (8 tbsp) butter softened
1 cup sugar
1 cup ube powder

B.
1 egg
2 tbsp ube extract
1/4 cup evaporated milk

C.
Sift the dry ingredients
1 1/4 cup plus 1 tbsp all purpose flour
1 tsp baking powder
1/2 tsp baking soda
a pinch of salt

D.
1/2 cup instant oats

Using a stand mixer, whisk all the. A ingredients. Whisk for a minute over high speed.
then slowly add B ingredients – whisk for 2 minutes over high speed.
add C ingredients
Add D
Whisk all ingredients well for 2 minutes.
Chill batter in the fridge for 3 hours or overnight.
Pre heat oven to 350 F.
Overn rack at the center.
Coat baking trays with cooking spray and line with parchment.
using a medium ice cream scoop – divide batter into 16 pcs.
Lightly flatten the top using the back of a spoon.
Bake at 350 F between 14 to 15 minutes.
Cool down using a wire rack.
Serve.

    Can i use frozen ubein lieu of te ube powder?

      I don’t know what is the texture going to be if you do. I have not tried using the real ube..
