STIR FRIED PORK CHOP WITH JALAPENO and MAYONNAISE

Cooking time: 10 minutes
yields: serves 2 with steamed rice
1 cup cooking oil
1 1/4 lb boneless pork chop cut into long strips
4 tbsp cornstarch
salt and pepper
1 medium size onion, peeled and chopped
1 large Jalapeno pepper, seeded and chopped
5 cloves garlic,minced
1 cup cilantro
1/2 cup chopped green onions
4 tbsp water
2 tbsp hot sauce like Siracha or Tabasco or El Tapatio
1/ 4 cup mayonnaise
Pre heat oil in a wok to 350 F.
Meanwhile, combine pork with cornstarch and season with salt and pepper.
Fry pork for 5 minutes until brown.
Remove from wok
Remove oil but leave 2 tbsp.
Add onion, jalapeno and garlic and cook for a minute.
Keep stirring.
Add cilantro, green onions and cook for 30 seconds.
Stir in water, hot sauce and mayonnaise – and combine well.
Add pork chops.
Turn off heat.
Combine well.
Serve with steamed rice.
