How to make simple chicken enchilada
Prep time: 10 minutes
Cooking time: 15 minutes at 350 F
Yields: 2 servings for lunch
1 small can tomato sauce
1 tsp ground pepper
1 tsp salt
1 cup (8 oz) grated mozzarella cheese
1 tsp cumin powder
½ cup chicken broth
1 lb baked chicken breast, diced.
4 pcs flour tortillas, 9 inch diameter.
1 cup fried onions
Arrange oven rack at the center of the oven and pre heat oven for 350 F.
Meanwhile, place tortillas in the microwave and heat for 30 seconds until soft and
pliable.
Let’s make the sauce by combining tomato sauce, cheese, salt, pepper, and ground
cumin in a small bowl.
Place tortillas in a flat surface, then place a tablespoon of the tomato mixture at the
center before adding ¼ of the diced chicken at the center. Then roll it. Set aside and
finish the rest of the tortillas.
When done, place 2 tbsp of the tomato mixture at the bottom of the baking dish
before arranging the tortilla rolls. Cover the top with the rest of the sauce. Then
cover with fried onions before baking it.
Bake for 15 minutes. (uncovered)
Slice and put a dollop of sour cream before serving. Enjoy.
