PANDAN AND UBE CUPCAKES
Prep time: 20 minutes
Baking time: 15 to 17 minutes
Yields: 24 cupcakes
1 stick (8 tbsp) butter – softened
2/3 cups sugar
3 eggs
1 can condensed milk
1/2 cup evaporated milk
1 tbsp baking powder
3 cups all purpose flour
ube extract
pandan extract
Cream butter – scrape sides occasionally throughout
Add sugar in 2 batches and continue to whisk
Add eggs one at time and keep whisking
Add condensed milk and keep whisking.
Add evap and using a rubber spatula combine well.
Sift flour and baking powder and gradually add to the batter.
Keep whisking until smooth
Divide into and flavor each with ube and pandan
Combine well.
Coat cupcake liners with cooking spray.
Place one ice cream scoop portion in each.
Pre heat over to 350.
Place oven rack at the center.
Bake cupcakes between 15 to 17 minutes.
Cool down in a wire rack.
Dust with powdered sugar before serving.
